Today sweets are identified as harmful for health, but Traditional Bhartiya Sweets were developed after much researches, so those are not only offer wonderful taste, but also not harmful for health.
This Jalebi is an ancient Bhartiya Traditional Sweet, that is mentioned in an Ancient Treatise - 'Bhoj Kutuhal' by Raghunath, where one can find its recipe. Jalebi's ancient name was "Kundlika" due to its circular shape. It was also called "Ras Vallika" or "Jal Vallika" as it is filled with sugar syrup. Now this "Jal-Vallika" become Jalebi.
First, the fermented refined wheat flour solution is prepared. Then it is transferred into a thick piece of cloth to pour with pressure in a cauldron filled with hot 'Ghee' - milk fat. The solution then poured through a small hole in that cloth in circular or any design for frying. Hot 'Ghee' let them fry soon and these 'Jalebis' turn a bit pink in the cauldron. This means it is fried well and 'Halwai' can put them out from cauldron.
But wait... these 'Jalebis' are still not ready to be eaten. These hollow pipes are bland in taste. So now 'Halwai Ji' pour these fried Jalebis in sugar syrup for a while and the Jalebis are ready to serve.
In olden times, people took the breakfast of Jalebi with hot milk after their meditation and exercises, in the morning. Even today also, in Jaipur the same tradition is followed by the new generation. Jaipurities go to esteemed traditional Halwais to eat Hot Jalebis with saffron decoration and hot milk with thick layer of cream. They usually dip 'Jalebi' into hot milk to balance its extra sweetness.
This dry fruit rich hot creamy milk in earthen pots with saffron decorated Jalebis is a must to add dish in all Indian weddings.
